Espresso Fudge Cupcakes with Chocolate Cream Cheese Frosting

I am a sucker for coffee flavored things and these cupcakes had the right amount of espresso flavor to satisfy my expectations in a magical fashion. I am not always a lover of frosting, but this chocolate cream cheese frosting was A-mazing and had such a rich flavor that i will definitely be using it again in the future. 

So much chocolate goodness! 

Cupcake Ingredients:
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 2 tsp espresso powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter (half a stick)
  • 1 cup sugar
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup chocolate chips
-Pre-heat oven to 350ยบ
-Mix flour, espresso powder, baking powder, baking soda, and salt
-In a separate bowl, cream the butter and sugar until fluffy
-Add in the vanilla and egg
-Slowly add the flour mixture and milk
-Stir in the chocolate chips
-Pour into cupcake liners in a cupcake pan and bake for 20 minutes

Frosting Ingredients:
  • 4 oz. cream cheese
  • 1/2 tsp vanilla
  • 2 cups powdered sugar
  • 3 tsp cocoa
  • Splash of milk
-Melt the cream cheese a bit and add the vanilla slowly
-Slowly add sugar, cocoa, and milk
-spread on cooled cakes and top with chocolate chips or espresso beans if your are feeling fancy

You are now ready to enjoy cupcakes, which i have been told are a fantastic remedy to all maladies.
